no, it’s not from Hainan, China as many (inaccurately) claim. one of Singapore’s many original creation and national dishes. the stars of this dish are the flavoured rice and chilli sauce, not the chicken! chicken is served slightly pink and cooled but perfectly safe to eat due to our cooking process, and adherence to FDA food safety standard.

this secret recipe is kindly shared by uncle George, the owner of the original (there are many claimants but ONLY 1 ORIGINAL) katong laksa in Singapore. our chef, lifetime patron and fervent supporter of the original katong laksa, was made to never divulge what goes into the special broth ...this is not your regular laksa which Adelaidians are accustomed to... no, it
does not come served with broccoli, chicken, beef, spring onions or coriander. and it’s really famous! just google the keywords “katong laksa George”!

Classic which is dsitinct to Singapore, bak chor mee is simply translated as minced pork noodles. Springy flat egg noodles cooked al dante, tossed in garlic oil ad vinegar based sauce and topped with minced pork, fishballs, slices of fish cake and stewed mushroom, served with a small side of meat broth just enough to "wet the lips" for this tasty dish.
